Yeast provides carbon dioxide and some flavour to the mix. Lactic acid preserves the bread for longer time. Bread makers include timers to control the bread making process. Timer allows the consumer to load the machine with ingredients before sleeping while baking can start early morning to provide freshly baked bread for breakfast.
